1 lb bone-in, skinless chicken thighs

2 tbsp olive oil or ghee

1 large onion, diced

3 cloves garlic, minced

1 tsp garam masala

½ tsp cumin seed

¼ tsp turmeric powder

1 cup plain yogurt or Greek yogurt

2 tbsp lemon juice (or more to taste)

Salt and freshly ground pepper to taste

For the marinade:

1 tbsp olive oil or ghee

1 small onion, diced

3 cloves garlic, minced

2 tsp garam masala

½ tsp cumin seed

¼ tsp turmeric powder

For the spice rub:

1 tbsp ground cumin

1 1/2 tsp dried mint leaves

1/2 tsp ground coriander

Pinch of saffron threads (optional)


To make the spice rub, mix together 1 tbsp ground cumin, 1 1/2 tsp dried mint leaves, 1/2 tsp ground coriander and a pinch of saffron threads, if using.
